Story

The small town of Maceo, originally called San Juan de Mata, has a long tradition in cacao. Farmers around the area usually intercrop cacao with plantain, beans, palm, and timber tree species. Some also grow ornamental flowers and plants. This cacao is collected fresh from around 250 farmer families. Their plots are on average about 2 hectares. Cocoa from the region is known for its low cadmium levels.

Aromac is a local company whose objective is to support local producers by paying better prices and by returning a percentage of the profit they make to the farmers. They also actively support a local initiative that helps women victims of domestic abuse.

The local government recently built a fermentation center where the post harvesting takes place. Special protocols were developed for each of the types that are exported by the company

Post Harvesting Process

Fermentation is done in linear boxes in a period of 7 days with 4 turns. The beans are then dried in solar tunnels on wooden tables for 7 to 10 days depending on the weather conditions.

Flavour

Medium body with bright acidity; notes of tropical fruit, pine nuts, cashews, lemon grass and a hint of nutmeg.
