CocoaRack™ 8 is a professional fermentation system designed to help cocoa producers achieve more consistent, repeatable, and higher-quality fermentations. Unlike traditional fermentation boxes, CocoaRack™ uses eight food-grade perforated trays housed within an insulated enclosure, allowing for improved drainage, airflow control, traceability, and ease of handling.
Each tray holds approximately 20–25kg of wet cocoa beans, providing a total capacity of 160–200kg per rack. The close-stack design helps retain fermentation heat while the perforated HDPE trays allow excess pulp and fermentation liquids to drain into a dedicated collection tray below. Adjustable side vents provide airflow control throughout the fermentation process.
Built from durable hardwood and designed for tropical environments, CocoaRack™ is ideal for fine flavour cocoa producers, farmer cooperatives, exporters, and research facilities seeking greater control over fermentation quality. Trays can be removed individually for inspection and turning, while integrated traceability panels allow producers to record variety, harvest dates, and fermentation information for each lot.
Additional CocoaRack™ units can be connected side-by-side to expand capacity as production grows, making the system suitable for both small farms and larger cooperative operations.
