West-In Cocoa Beans - Andhra Pradesh, India

Grown beneath the shade of coconut and other tropical trees, West-In cocoa comes from the fertile Krishna and Godavari river basins of coastal Andhra Pradesh.

Founder Kondepati Srinivasa Rao established West-In with a passion for sustainable agriculture and a vision to share the potential of Indian cocoa. From his 72-acre farm, he works alongside local small-scale growers, sharing knowledge and technical guidance to improve cocoa quality and support sustainable livelihoods.

Flavour notes

A full flavour profile with gentle acidity, opening with sun-ripened mango and developing into woody notes and cashew. A buttery character follows, leading to a delicate floral finish.

Fermentation and drying

These predominantly Forastero beans are centrally fermented in wooden boxes before being sun-dried on raised wooden trays beneath open shelters. The beans are stirred three to four times daily to encourage even drying, with the combined fermentation and drying process typically taking six to eight days, depending on weather conditions.
