West-In Cocoa Nibs – Andhra Pradesh, India
Grown beneath the shade of coconut and other tropical trees, West-In cocoa comes from the fertile Krishna and Godavari river basins of coastal Andhra Pradesh.
Founder Kondepati Srinivasa Rao established West-In with a passion for sustainable agriculture and a vision to share Indian cocoa’s potential. From his 72-acre farm, he works alongside local small-scale growers, sharing knowledge and technical guidance to improve cocoa quality and support sustainable livelihoods.
Flavour notes
A full flavour profile with gentle acidity. Sun-ripened mango develops into woody notes and cashew, followed by a buttery character and delicate floral finish.
Production
The predominantly Forastero beans are centrally fermented in wooden boxes before being sun-dried on raised wooden trays beneath open shelters. They are stirred three to four times daily to encourage even drying.
Once dried, the beans are roasted and broken into nibs, revealing their rich flavour and satisfyingly crisp texture.
