West-In Cocoa Butter – Andhra Pradesh, India
Produced from cocoa grown beneath the shade of coconut and other tropical trees, West-In cocoa butter originates in the fertile Krishna and Godavari river basins of coastal Andhra Pradesh.
Founder Kondepati Srinivasa Rao established West-In through a passion for sustainable agriculture and a vision to share Indian cocoa’s potential. From his 72-acre farm, he works alongside local small-scale growers, providing knowledge and technical guidance to improve cocoa quality and support sustainable livelihoods.
Character
A smooth, creamy cocoa butter with a rich, buttery texture. Its delicate natural cocoa aroma is complemented by subtle notes of tropical fruit, cashew and gentle florals.
Production
The predominantly Forastero cocoa beans are centrally fermented in wooden boxes before being sun-dried on raised wooden trays beneath open shelters. They are stirred three to four times daily to encourage even drying.
Following fermentation and drying, the cocoa is processed and pressed to separate the cocoa butter from the cocoa solids.
